Metamask is only an interface to the blockchain. The blockchain itself is stored by the miners and replicated on many machines. If Metamask shuts down, others can provide a similar service, or in the worst case, you can run your own node on your machine. So no, you won’t lose your assets. Only if every single Ethereum node would be shut down.
